Kaze No Mori "Wind of the Woods" Junmai Muroka Nama Genshu
NV Alpha Kaze No Mori Shiboribana Junmai Muroka Nama Genshu and Yucho Kaze no Mori Wind of the Woods Junmai Muroka Nama Genshu Sake are produced using traditional, non‐pasteurized methods that emphasize the expression of their terroir. Locally sourced grains are central to their production—for example, Akitsuho rice grown in Nara Prefecture is milled to 65%—and the use of mineral-rich water from 100‐meter deep wells is carefully integrated into the process. Both expressions are bottled immediately after pressing to capture the brew’s initial character and undergo natural in‐bottle secondary fermentation, a technique that creates a subtle, inherent effervescence. In certain releases, a pét-nat approach is applied to further showcase the diversity of production techniques, ensuring that the final product reflects its origin and the meticulous craftsmanship behind its creation.

Aging
