Kuheiji Kyou Din

Kamoshibito Kuheiji “Kyouden” is a junmai daiginjo sake produced by the KUHEIJI brand with a focus on terroir and meticulous rice cultivation. The brewing process begins in the rice fields where carefully tended Omachi rice—recognized for its robust, earthy nature—is grown. In addition, the production incorporates 50% polished Yamadanishiki rice, underscoring a commitment to both traditional craftsmanship and the domaine concept. Utilizing the sokujo method, the sake is crafted with technical precision and an alcohol content of 16%. The process reflects an integrated approach to vineyard-inspired practices applied in sake production, emphasizing both cultivation and production techniques while honoring the natural characteristics of the rice.
