An incredibly complex Arabashiri (free run) sake crafted by brewmaster Rumiko Moriki using organically grown Yamada Nishiki rice polished to 90% remaining, a rarity that allows full expression of the rice character. Produced using the traditional Kimoto method with native yeast fermentation, this sake undergoes minimal post-brewing intervention: unfined, unfiltered (muroka), unpasteurized (nama), and undiluted at cask strength (genshu). Can be served hot or cold.
