This sake is produced from Moriki’s organically grown premium Yamada Nishiki rice, polished to 90% remaining to maintain the core character of the grain. Utilizing traditional production methods—including the Kimoto technique and the arabashiri (free-run) pressing process—the fermentation is carried out with native yeast. Minimal post-brewing intervention is employed: the sake is unfined, unfiltered (muroka), undiluted (genshu), and unpasteurized, thereby reflecting the unique terroir and winemaking philosophy central to Moriki’s craft.
