NV Cellario E'Rosato

A rosé produced from Dolcetto grapes sourced from the San Luigi vineyard and Nebbiolo from the Galli vineyard. The wine is made using a saignée method with approximately 24 hours of skin contact, followed by spontaneous fermentation with native yeasts. Aged in cement tanks and stainless steel for 6 to 8 months. Bottled unfined and unfiltered with minimal sulfur addition (around 10ppm). This natural-method rosé displays a ruby-pink hue and offers a bright, crisp, and dry profile with fresh acidity.
