NV Christophe Mignon ADN De Meunier

Christophe Mignon's Brut Nature Blanc de Noirs ADN de Meunier is a 100% Pinot Meunier Champagne from family vineyards in the Vallée de la Marne, the heartland of this variety. The wine combines equal parts of two recent vintages, ages in bottle for a minimum of two years, and receives zero dosage. Mignon farms 6-6.5 hectares planted almost exclusively to Pinot Meunier across thirty parcels between Le Breuil and Festigny, with vines originally planted by his great-grandparents in deep clay and chalky Tuffeaux soils with average vine age of 45 years.

Farming

Biodynamic farming (not certified) practiced for 16-20 years, with organic principles. Follows lunar calendar cycles for all vineyard work, harvests, tirage, and disgorgement. Employs phytotherapy, homeopathy, and geobiology. Labor-intensive approach with one person per hectare to achieve very low yields and obtain mature, high-quality fruit. South- and south-west-facing plots. Sustainable farming practices.

Fermentation

Traditional Method with secondary fermentation in bottle; plot-by-plot vinification in stainless steel and enamelled/epoxy-lined tanks with temperature control lasting 15-30 days; pneumatic press; no malolactic fermentation; minimal sulfur used; each of the 30 terroirs vinified and conserved separately
 

Aging

Each plot aged separately on fine lees for 5 months before blending; reserve wines aged additional 12 months on fine lees; minimum 24 months aging in bottle before disgorgement; blend of equal parts current and previous vintage; zero dosage (Brut Nature, 0 g/l); no filtration; biodynamic practices attuned to moon cycles
