Production

Fermented for 20 days at 18°C in stainless steel tanks with native yeasts, no malolactic fermentation, 45 mg/L added sulfur, no dosage at bottling, making it a 'Brut Nature' style. The wine is entirely hand-harvested and bottled with low sulphites.
