NV Domaine Paleine Saumur Brut
A sparkling wine from Saumur, Loire Valley, produced from biodynamically farmed grapes with a blend of 60% Chenin Blanc, 20% Chardonnay, 10% Cabernet Franc and 10% Grolleau Gris. Sourced from the Puy-Notre-Dame sector, renowned for the Brèzè vineyard, where clayey-calcareous-chalky soils are particularly well-suited for Chenin Blanc and Cabernet Franc. Initial alcoholic fermentation occurs in stainless steel vats at 20°C, paused by cooling to maintain 22g/l residual sugar, followed by in-bottle refermentation for effervescence. Aged for 18 to 36 months on the lees with no added sulphites or sugar.
