NV Domaine Paleine Saumur Brut
This sparkling wine from the Middle Loire, Loire Valley, France, is produced under AOC Saumur regulations using biodynamically farmed grapes. The blend comprises 60% Chenin Blanc, 20% Chardonnay, 10% Cabernet Franc, and 10% Grolleau Gris, sourced from the Puy-Notre-Dame sector—home to the renowned Brèzè vineyard—where clayey-calcareous-chalky soils are ideally suited for Chenin Blanc and Cabernet Franc. Vinification begins with an initial alcoholic fermentation in stainless steel vats at 20°C, which is paused by cooling to retain 22 g/l residual sugar, followed by in-bottle refermentation to develop effervescence. The wine is aged on its lees for 18 to 36 months without added sulphites or sugar.
