NV Faccia di Vino Red Lambrusco

A dry sparkling Lambrusco made from two distinct grape varietals: Lambrusco di Sorbara with less-pigmented skins producing a pink-colored wine through short maceration and quick pressing, and 100% Lambrusco Grasparossa di Castelvetro from the Fondo Belvedere vineyard at 330 feet elevation. The winery, founded in 1860 in Castelvetro village, Modena province, is now in its fourth generation and produces 100% estate wines from family vineyards in the smallest Lambrusco wine-producing region. This all-natural wine is crafted by a powerhouse woman winemaker and is bone-dry with gentle carbonation. 11% ABV. Highly refreshing and drinkable when chilled.

Fermentation

Native yeast fermentation in stainless steel at low temperatures; cuve close method at 18°C for sparkling production with traditional pressing followed by 36 hours cold maceration
 

Aging

Held at low temperature with lees contact during cold stabilization for 2 months; bottled upon demand to preserve freshness; minimal SO2 at bottling only; unfined, vegan
