NV Istine Vermouth Rosato
Istine Angela Fronti, in collaboration with the historic Bordiga distillery of Piedmont, produces an organic vermouth using 100% Sangiovese grapes. Sourced from vineyards in Radda, Chianti Classico, the base wine is crafted as a rosato, with its distinctive natural pink hue achieved through grape skin contact rather than added colorants or caramel. The wine is then infused with a carefully chosen blend of botanicals—ranging from a select group of herbs to a comprehensive mix of up to 34 botanicals—that reflect the winemaking traditions of both Tuscany and Piedmont. Bottled at 18% ABV with a measured 180 g/l of sugar, this vermouth exemplifies a precise approach to blending vineyard heritage with innovative production techniques.

Grapes are processed into base wine, with preparations allowing for distinct fermentation approaches.
Fermentation
One method employs temperature-controlled stainless steel tanks with native yeast and a brief skin contact of 12–16 hours before pressing. An alternative process uses concrete tanks with indigenous yeasts and extended maceration on skins for up to 45 days prior to pressing. In a parallel procedure, infusions are performed separately in wheat alcohol (at varying strengths) for 40–45 days; the infusion is blended and rested for 3 weeks before filtration and bottling with no added color. Additionally, a distillation is carried out using a blend of herbs and botanicals, overseen by winemaker Angela Fronti in collaboration with Bordiga and in close cooperation with Bordiga dal 1888 in Cuneo, Piemonte.
Aging
Portions are aged for 6 months in stainless steel, while others undergo barrel aging in 10–20 hL barrels for approximately one year and are subsequently filtered using a large-pore filter.
