NV Istine Vermouth Rosato

A rosé vermouth born from a collaboration between Istine's Angela Fronti and the historic Bordiga distillery in Piedmont. The base is a 100% organically grown Sangiovese rosé from Istine's vineyards in Radda, Chianti Classico. The wine is infused with 34 botanical herbs including angelica, orange, wormwood, cardamom, coriander, cassia, dittamus, fennel, gentian, lavender, Kina, mint, quassio, rose, sage, rosemary, elder, satureja, linden, thyme, and violet, combining Piedmont vermouth tradition with Chianti aromas. The natural pink hues are derived from grape skins without additives. Can be enjoyed pure at room temperature or on ice with lemon zest or kumquat, and serves as a base for classic cocktails like the Americano, Manhattan, or Negroni.

Native/indigenous yeast in temperature-controlled stainless steel tanks and concrete tanks
 

Aging

6 months in stainless steel for base wine; approximately 1 year in 10-20 hL barrels for red wine, filtered using a large-pore filter; infusions done separately in wheat alcohol of varying strengths for 40-45 days, followed by blending and resting for 3 weeks before filtration and bottling; distilled with a blend of herbs and botanicals in collaboration with Bordiga dal 1888 distillery in Cuneo, Piemonte
