NV La Staffa Mai Sentito Frizzante
La Staffa’s “Mai Sentito” is a limited-production spumante produced predominantly from Verdicchio with a minor addition of Trebbiano. Sourced from the Marche region, the wine is crafted using the ancestral (Pet-Nat) method—refermenting in bottle with its own indigenous yeast and bottled before the second fermentation fully completes. This traditional technique, which allows a natural maceration of yeast during fermentation, reflects both the unique character of the vineyard’s terroir and the striking features of the region. The name “Mai Sentito,” meaning “Never before tasted/heard of,” emphasizes the wine’s distinctive and innovative production approach.

Harvest
Grapes are harvested earlier than for regular still wines to maintain lower alcohol levels, collected in small boxes, and pressed immediately.
Fermentation
Spontaneous fermentation is initiated using native yeast in stainless steel vessels, sometimes under controlled temperature for 20 days. In certain cases, fermentation is halted on fine lees for 4 months before refermentation in bottle, following the ancestral or ancestral spumante methods. Some batches are bottled with residual sugar and before completion of the second fermentation, allowing for yeast maceration.
Aging
Refinement includes horizontal bottle contact in the cellar and a minimum of 6 months of maturation—either in bottle or in botte.
