NV Mariotti Set e Mez Fortana dellEmilia Rosato

Fortana Frizzante from Emilia-Romagna vinified bone dry using methode ancestrale. Produced from ultra-old vines, many 80-100+ years old, some on native rootstock, growing on sandy, windy Adriatic shores just 300 meters from the sea in the historic Bosco Eliceo growing area. This rare Fortana grape undergoes 48 hours skin-contact fermentation, then ages 6 months in concrete. The wine captures the dramatically salty, sandy terroir with alternating fog and sun. Unfiltered at 12.5% alcohol; locals traditionally shake the lees before drinking.

Farming

Practicing organic. Vines almost 80 years old (planted in 1952), with some over 100 years old on native rootstock. Cordon and Guyot training methods. Vine roots extend 1.5 meters deep.
 

Fermentation

First fermentation in tank with native yeasts for 20 days without temperature control, with 1-2 days on skins; second fermentation done in bottle with addition of grape must from same year (metodo ancestrale). No malolactic fermentation. 48 mg/L total sulphur (20 mg/L added). Unfiltered.
 

Aging

6 months in concrete.
