NV Nada Metodo Classico Dossagio Zero
Quality Sparkling Wine (V.S.Q.) produced using the Metodo classico method with dosaggio zero, resulting in a zero-dosage sparkle. This rosé displays a rose petal color with fine and plentiful perlage. The production follows traditional methods, yielding a wine with mineral balance and savoury characteristics. The wine features a crisp sparkle with deep and persistent flavor.

Harvest
Very early harvest during the last fifteen days of August; hand-picked grapes placed in ventilated plastic crates; grapes pressed directly and protected against oxygen with dry ice; must undergoes static decanting.
Fermentation
Alcoholic fermentation at 14-15°C with dry ice protection throughout the production cycle; tirage in spring with prise de mousse fermentation lasting 20-25 days at 16°C.
Aging
Aged in barriques for four months; aged at least 18 months sur lattes with yeasts returned to suspension every two months using coup de poignet technique; disgorging and addition of liqueur d'expédition, then aged for another month.
