NV Naturale Vermouth Rosso is a red vermouth produced in Sicily, Italy. It is made with Nero d'Avola grapes and features a blend of Sicilian herbs and aromatics. This vermouth is a joint venture between Giusto Occhipinti of COS winery and Simone Sabaini of Sabadi, emphasizing artisanal, organic ingredients from the region. The wine undergoes spontaneous fermentation with indigenous yeast and is a hybrid between amaro and vermouth, showcasing Sicilian heritage and flavors. It is noted for its organic farming practices and can be enjoyed on its own as an aperitif or digestive, or used to enhance cocktails.
