NV Naturale Vermouth Rosso

A red vermouth crafted from organic Nero d'Avola, vinified with spontaneous fermentation using indigenous yeasts. This is a joint venture between Giusto Occhipinti of COS winery in Acate, Sicily and Simone Sabaini, founder of artisanal chocolate producer Sabadi in Modica, Sicily. The project celebrates their friendship and love for Sicily, using a secret recipe of Sicilian herbs and botanicals. The bouquet bursts with wild herbs and rich Sicilian citrus peel, with notes of mint, chamomile and rhubarb. On the palate, it presents a harmonious mix of red and black berry fruitiness, warmed by notes of brown spice and a fleeting lift of alpine herbs. The finish is cool and pleasingly bitter. COS is located in Vittoria at the southeastern tip of Sicily, in an area characterized by red, ochre, and yellow-toned soils. A hybrid between amaro and vermouth. Can be enjoyed chilled on its own as an aperitivo or digestive, or used in cocktails.
