NV Pascal Agrapart "Terroirs" Blanc de Blanc Grand Cru

This Blanc de Blancs is an estate‐grown Grand Cru Champagne produced exclusively from Chardonnay cultivated in the villages of Avize, Oger, Cramant, and Oiry. The cuvée is crafted in a grower–producer style—with Organic certification where applicable—and may be assembled from two consecutive vintages. In some bottlings, the older vintage is aged in neutral oak barrels for one year prior to blending. All versions are aged on the lees in bottle for at least four years, and certain expressions are styled as Extra Brut with a dosage limited to 5 grams per liter and a brief pre‐release disgorgement period.

Farming

Organic estate cultivation is implemented using a natural approach, with soils maintained through ploughing and the annual addition of local ingredient compost, and low/no Sulfur Vinification techniques applied.
 

Harvest

Grapes are selected for natural processing.
 

Fermentation

Indigenous yeast initiates natural fermentation accompanied by complete (100%) malolactic fermentation.
Fermentation is conducted in Stainless Steel Vats, with selected batches undergoing largeformat barrel aging.
 

Aging

Lees contact is maintained for four years.
Older vintages are aged exclusively in neutral oak.
Finishing:
Riddling is performed manually at the domain.
The product is not fined or filtered.
Disgorgement takes place two months before release, followed by a controlled dosage of 5 g/L (supporting an Extra Brut style with low overall dosage).
