NV Podere Sottoilnoce Cattabrega

A sparkling rosé from Modena composed of Lambrusco Grasparossa blended with Lambrusco di Sorbara and Uva Tosca—hyper-local grape varieties. The Uva Tosca comes from the 2-hectare 'Vigna del Lago' vineyard at 300 meters elevation, facing west, with vines averaging 15 years of age. Zero/zero production with the Grasparossa crushed rather than pressed to avoid bitterness. Vinified dry and undergoes secondary fermentation in bottle around February/March triggered by the addition of grape must. Undisgorged and kept under crown cap. An ideal effervescent expression of Modena tradition.

Fermentation

Spontaneous fermentation with native wild yeasts; fermented separately in ceramic, steel, and glass vessels; Grasparossa fermented on skins; 1 day of skin contact for other varieties; first fermentation in cement tanks without temperature control until reaching approximately 11.5% alcohol; blending after fermentation to achieve desired taste and attributes of each variety
 

Aging

Bottled during first winter cold with light percentage of sugar in must; mix of ancestral method and champagne method styles with second fermentation in bottle under crown cap; bottled with fresh grape must from previous vintage to kickstart secondary fermentation leaving just enough sugar and alive yeasts to ferment to a fizz; not disgorged; no filtration, no fining; very low sulfur typically just over 10mg/L, SO₂ <25mg/L
