NV Podere Sottoilnoce Confine

A blend of 12-15 different old vine native varieties made in the Pét-Nat style, representing the traditional mixed vineyard heritage of the Emilia region. The vineyard is comprised of 60-year-old vines with both white and red grapes harvested and fermented together, producing a light red or dark rosato-style wine. The vineyard is centered around a walnut tree (noce), which gives the winery its name Sottoilnoce, meaning "under the walnut tree." Fermented on the skins for four days using natural and wild yeasts, then transferred to ceramic tanks to age. Bottled with fresh grape must for second fermentation in the bottle. Made with very little sulfur and no filtration or fining. This was the final vintage as the vines no longer produce sufficiently.

Farming

Certified Organic and Biodynamic. Biodynamic principles applied since 2016. The 6-hectare vineyard is part of a 14-hectare estate with the remaining land dedicated to woods, lakes, and bees to maintain balance between monoculture and surrounding nature.
