The vineyard is comprised of 60-year-old vines with both white and red grapes harvested and fermented together, producing a light red or dark rosato-style wine. The vineyard is centered around a walnut tree (noce), which gives the winery its name Sottoilnoce, meaning \"under the walnut tree.\" Fermented on the skins for four days using natural and wild yeasts, then transferred to ceramic tanks to age. Bottled with fresh grape must for second fermentation in the bottle. Made with very little sulfur and no filtration or fining.
