NV Podere Sottoilnoce Saldalama

Saldalama is a Rosso Frizzante from Castelvetro di Modena, the heart of Modena's Lambrusco production, representing the conviviality and genuineness of the Emilian tradition. This chameleon-like wine blends five grape varieties: Lambrusco Grasparossa provides strength, dark fruit, and energy; Lambrusco Sorbara adds elegance and acidity; Uva Tosca contributes freshness and bright red fruit; the rare Lambrusco Fioranese offers rusticity and backbone; and Trebbiano Modenese, a local white clone, imparts bright fruit and delicate floral notes. Each variety is harvested, fermented, and aged separately for nine months in stainless steel tanks before being blended under the crescent moon in late May. The wine undergoes natural secondary fermentation in bottle using sweet grape must from the same varieties via the ancestral method, remaining undisgorged.

Organic, sustainable, and biodynamic certified. Uses compost, organic fertilizers, and natural preparations in vineyards, avoiding herbicides, pesticides, and synthetic fertilizers. Biodiversity protected through wild fauna, shrubs, spontaneous vegetation, and uncontaminated woods.
 

Harvest

Hand-harvested with minimal intervention; each grape variety harvested and processed separately
 

Fermentation

Alcoholic fermentation with indigenous yeasts in stainless steel tanks, each variety vinified separately; sulfur addition in tiny quantities (10-15 mg/L) immediately after alcoholic fermentation; final blend bottled with sweet grape must or frozen must from the same harvest for secondary fermentation in bottle using the ancestral method without added yeast; unfiltered and without disgorgement
 

Aging

Aged for nine months in stainless steel tanks before blending and bottling for natural secondary fermentation
