NV Podere Sottoilnoce Saldalama
Saldalama is a Rosso Frizzante from Castelvetro di Modena, the heart of Modena's Lambrusco production, representing the conviviality and genuineness of the Emilian tradition. This chameleon-like wine blends five grape varieties: Lambrusco Grasparossa provides strength, dark fruit, and energy; Lambrusco Sorbara adds elegance and acidity; Uva Tosca contributes freshness and bright red fruit; the rare Lambrusco Fioranese offers rusticity and backbone; and Trebbiano Modenese, a local white clone, imparts bright fruit and delicate floral notes. Each variety is harvested, fermented, and aged separately for nine months in stainless steel tanks before being blended under the crescent moon in late May. The wine undergoes natural secondary fermentation in bottle using sweet grape must from the same varieties via the ancestral method, remaining undisgorged.
