NV Podere Sottoilnoce Valtiberia
A Rifermentato from Emilia-Romagna featuring 70% Trebbiano Modenese and 30% Trebbiano di Spagna (some sources cite 50/50 blend), hand-harvested from organically cultivated vines in the 2ha Sabatina di Sopra vineyard near Levizzano Rangone at 220m elevation, facing west/northwest. Grapes are destemmed and directly pressed, with juices spontaneously fermenting separately to full dryness. After blending and maturation in concrete tanks for several months, the wine undergoes secondary fermentation in bottle triggered by unfermented grape must, bottled during the waxing moon. Released undisgorged, unfined, and unfiltered with minimal added SO2. Vinified from grapes farmed to full maturity on silty-loam, river-sediment, and limestone soils. Bright and inviting with aromas of yellow fruits and white blossoms, featuring small, fine bubbles. Rich and stone-fruit dense yet refreshing and dry, with a straightforward and dynamic finish.
