NV Unified Ferments Snow Crysanthemum
Snow Chrysanthemum is produced from a hardy, nutritionally rich varietal of Chrysanthemum that grows exclusively in China’s Kunlun Mountain region—a high‐altitude terroir where the plant spends nearly half its lifecycle buried under snow. Its cultivation under such extreme conditions contributes to characteristics that distinguish it from conventional chrysanthemum. The production process employs a honey‐driven fermentation, with certain formulations utilizing a kombucha starter in a method reminiscent of Jun fermentations. This non‐alcoholic, still beverage is crafted solely from the Snow Chrysanthemum varietal, with no additional grape varieties or blends involved, and is processed to express the inherent, amino acid–rich tisane qualities of the flower.

Fermentation
FERMENTATION: Process employs filtered water, honey, and a kombucha starter; in select preparations, sugar is added. Snow Chrysanthemum flowers are incorporated to create a tisane infusion in the style of a Jun. Minimal intervention techniques guide the kombucha-driven fermentation, which develops dense, floral character with evolving aromatics—including specific components such as starfruit, shaved asparagus, and pollen.
Aging
AGING: Honey-driven fermentation methods are maintained during aging to consolidate character.
