Unified Ferments Snow Chrysanthemum is a non-alcoholic fermented beverage crafted from a hardy, nutritionally dense varietal of Chrysanthemum that thrives in China's Kunlun Mountain region, spending nearly half its life buried under snow. This adaptation causes its character to depart substantially from regular chrysanthemum. The beverage is fermented in the style of a Jun, using a kombucha starter sweetened with honey instead of sugar, to express an amino-acid rich tisane with dense floral character. Presented as a still beverage, it resembles a juicy orange wine in body and acidity.
