Ohmine 3 Grain Yamadanishiki is produced by Ohmine Shuzou in Yamaguchi, Japan—a brewery that resumed operations in 2010 after a long hiatus and later inaugurated a state‐of‐the‐art facility in 2018. Crafted as a Junmai Daiginjo, this sake is made from locally grown, additive‐free Yamada Nishiki rice milled to 50% and prepared using the region’s mineral‐rich “Benten water.” The product employs a distinctive three‐grain approach that reflects the natural terroir of areas such as the Akiyoshidai grassland, and it is brewed on a monthly basis to ensure optimum freshness. Collaborative innovations, including partnerships with Pharrell Williams and Nigo, further underscore the brewery’s commitment to merging traditional techniques with modern production methods.
