Tenbi Junmai Gingo
Tenbi is a modern sake brewery established in 2020 in Shimonoseki, on Honshu's southern tip, led by female Toji Miki Fujioka. This Junmai Ginjo exemplifies a 'New World' style emphasizing light, bright sake with subtle effervescence. Crafted with local brewing rice milled to 50%, it offers a Daiginjo-like profile at Junmai Ginjo classification. The brewery's philosophy that 'a tiny difference makes a big difference' results in a well-constructed sake that harmoniously balances umami, acidity, bitterness, and dryness. The sake evolves after opening, with initial effervescence settling into elegant, balanced flavors over several days as it oxidizes. The label design reflects the complexity of sake brewing, representing coincidences and the craftsmanship behind making great sake.
